By Diana Rattray, About.com

Crockpot pork loin is cooked in the crockpot then basted and finished in the oven.

Ingredients:

  • 1 boneless pork loin roast, about 3 to 4 pounds
  • salt and pepper to taste
  • 1 cup hot water
  • 1/4 cup molasses
  • 1/4 cup prepared mustard
  • 1/4 cup vinegar
  • 1/4 cup orange marmalade
  • 1 teaspoon grated orange or lemon peel
  • 1/4 teaspoon ground ginger

Preparation:

Place metal rack or trivet in bottom of slow cooker/Crock Pot (I fashion a trivet from aluminum foil). Sprinkle pork roast with salt and pepper; place on trivet in pot. Pour hot water around pork roast. Cover and cook on LOW for 6 to 8 hours, or until cooked through. An instant read thermometer should register about 150° to 155°. Transfer pork roast to a roasting pan with rack or rack of broiler pan. Combine remaining ingredients in saucepan; heat until simmering. Brush sauce mixture over cooked pork roast. Brown roast in 400° oven for 30 to 45 minutes, brushing with the sauce frequently. Makes 6 to 8 servings.
