  • 4 to 6 pork chops

  • 1 (1.4-ounce) envelope onion soup mix

  • 1/2 cup water

  • 1 large onion, coarsely chopped

  • 1 1/2 to 2 pounds potatoes, peeled and cut into halves or quarters

  • 4 to 6 medium carrots, cut into 1-inch slices

Tips

  • We prefer to use red-skinned or Yukon Gold potatoes for this dish, as they provide a better texture when cooked in the slow cooker.
  • If you have pork stock or chicken stock, you may use that instead of water.

Variations

  • Feel free to vary the root vegetables you use in this dish. You can try sweet potatoes instead of regular potatoes, or add turnips or parsnips instead of carrots.
  • If you have some fresh herbs in your fridge or your garden, this dish will benefit from a sprinkling of finely chopped parsley, rosemary, or thyme—or a combination thereof.

How to Store and Freeze Crock Pot Pork Chops

Cooked pork chops will keep in the refrigerator for three to five days after cooking, as long as they are wrapped well. You can also wrap them (foil works well) and store them in a zip-close bag in the freezer for three or four months. Then, simply defrost in the refrigerator and reheat until completely hot.
