I made up a similar recipe, so I had to chuckle when I found it on here. I do a couple of things different...I do not peel the potatoes, I have tried this with yukon gold, red skinned, and white potatoes (all are great...red skinned is probably my favorite), I use 2 cans of cream of mushroom soup, I sprinkle the chops with rotisserie seasoning, sometimes I add fresh garlic. It is a wonderful recipe, and it has definitely never needed any water added as the person suggested in the negative review. I have served this to the pickiest of eaters, and they have all loved it. I do want to try adding mushrooms but I haven't yet. The only thing I can think that might have caused the other persons to dry out is that maybe they cooked it on high instead of low? When I cook it, the pork chops are so moist, they flake apart with a fork - no knife needed. Definitely try this recipe...it is so easy and you can really personalize it anyway you want...it is a fun one to play with :)
