Savory Pork Roast with Red Cabbage

This pork roast is cooked with red cabbage in the slow cooker, an easy everyday meal for cool weather. Serve with potatoes or other side vegetables.

Ingredients:

  • 4 to 6 medium red potatoes, cut in large chunks, about 2-inches
  • 1 large onion, halved and cut in 1/4-inch slices
  • 1 boneless pork roast, about 2 pounds
  • 1 jar red cabbage with apple (approx. 12 ounces) or substitute a small can of sauerkraut, rinsed well and drained
  • 1/2 cup apple butter
  • 1 teaspoon garlic powder
  • salt and pepper, to taste
  • 1 tablespoon sugar, if sauerkraut is used

This is a real keeper. Chunk your potatoes big if you have a fast crockpot. I added baby carrots along with the potatoes and onion, and the vegs were done earlier than the pork. Sauerkraut is a perfectly fine substitute, but add as much as your crockpot will hold, and you may want to up the apple butter a bit. But no worries, this is a fairly forgiving recipe.
