This cranberry pork loin is easy to fix and cook in the slow cooker. Serve this tasty meal with your favorite rice dish and greens or green beans for a tasty family meal.

  • 1 (3 to 4 lb) boneless pork loin roast
  • 2 cloves garlic, minced
  • 1 can whole cranberry sauce
  • 1/4 c brown sugar
  • 1/2 c apple juice
  • 2 apples, cored, peeled and coarsely chopped
  • salt and pepper to taste

I've made this recipe a couple times and just made it again tonight. It had been a while, so I'd forgotten how good it is! I used country style boneless ribs instead of a loin roast (I think that cut of meat is less likely to dry out) and only cooked for about 6 hours on low. I also didn't have any apple juice on hand, so I used apple cider instead. It turned out perfect and was delicious served over some homemade mashed potatoes! Will definitely be making again sooner rather than later!
