Cheesy Crockpot Potatoes

Cheesy crockpot potatoes are a great take-along for a potluck or side dish for family dinner.

Ingredients:

  • 5 to 6 medium red or yellow potatoes, thinly sliced, about 6 cups
  • 1 can condensed cream of chicken soup, light or regular
  • 1 can (10 to 14.5 ounces) diced tomatoes with green chilies
  • 8 oz process American cheese, shredded
  • salt and pepper to taste

Preparation:

Combine all ingredients in the slow cooker. Cover and cook on low for 7 to 9 hours. Serves 4 as a side dish.
