Shredded Beef for Tacos

Slow roasted beef makes a great filling for tacos, and the slow cooker makes it so easy.

Cook Time: 10 hours

Total Time: 10 hours

Yield: Serves 6


  • 2 pounds beef roast, such as lean chuck or bottom round
  • 1 cup chopped onions
  • 1 tablespoon chili powder
  • 1 tablespoon crushed oregano
  • 1 minced garlic clove
  • 10 oz can diced green chiles
  • 28 oz can diced tomatoes


  • Place the beef in the slow cooker; top with the remaining ingredients in order given.
  • Cover and cook on HIGH for 5 hours or LOW 8 to 10 hours, until meat is tender. Break up meat with a wooden spoon, then cover and cook on low for 1 to 2 hours longer.
  • Shred the beef thoroughly with two forks and cook for another 30 minutes to 1 hour.
  • Serve rolled in flour tortillas, topped with lettuce, green onion, cilantro, tomato, cheese, sour cream, black olives, guacamole or salsa. Or serve in taco shells with your choice of toppings.
  • Serves 6

Accidently grabbed a pork roast..., Member mwp62

I accidently grabbed a pork roast, but went ahead with this recipe anyway, and it worked great. Yummy Tacos.
