Pot Roast with Porcini Mushrooms

This roast makes a very flavorful gravy. If desired, pour off juices and cook down to reduce and thicken before serving.

Ingredients:

  • 1 lean pot roast, such as a top sirloin, 2 1/2 to 3 1/2 pounds
  • 1 envelope brown, onion, or mushroom gravy mix
  • 1 package dried porcini mushrooms (2oz)
  • 1/2 cup hot water
  • 1/2 cup red wine (may substitute beef broth or unsweetened apple juice)
  • 1/2 cup diced dired apples or other dried fruit
  • 1/4 to 1/2 teaspoon garlic powder or 1 small clove fresh minced garlic
  • salt and pepper to taste
