Spiced Pot Roast

Ingredients:

  • 1 boneless beef roast, about 3 to 4 pounds (rump, top round, lean chuck, etc.)
  • 3 cups water
  • 1 cup cider vinegar
  • 2 tablespoons brown sugar, firmly packed
  • 1 (14 oz.) bottle ketchup
  • 2 lg. onions, quartered
  • salt and pepper to taste
  • 3 whole cloves
  • 3 bay leaves
  • 1 heaping tsp. mixed pickling spices
