Beef Pot Roast With Chili Flavors

Chili seasonings give wonderful flavor to this slow cooked pot roast. If you don't have ancho chile powder, use more chili powder blend, or a little chipotle, New Mexican, or other chile powder. If you really want to spice it up, add some jalapeno pepper rings to the crock.

Prep Time: 10 minutes

Cook Time: 8 hours

Total Time: 8 hours, 10 minutes

Ingredients:

  • 1 beef pot roast, about 3 to 4 pounds
  • 1 1/2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1 can (4 ounces) chopped chile peppers, mild
  • 1 teaspoon ancho chile powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • chopped fresh cilantro, optional

Did not have two kinds of chili powder so I used 2 1/2 teaspoons ordinary chili powder...and I cooked it on high for 5 hours. This meat is wonderful for soft or crispy tacos ...just drain liquids and shread with two forks, add cheese, chopped lettuce, chopped tomato, red onion rings, alvacado, taco sauce...whatever you like....great flavor and hearty texture...yum I made enchiladas also..with the meat, jack cheese and some chopped yellow onion rolled up and topped with enchilada sauce...sprinkle with more Cheese..put in oven 30 minutes or until cheese melts and heated through...my favorite now. ( I even started with a frozen roastin the slow cooker on high in the morning and all was ready by dinner time)lol
