Beef with Acorn Squash and Potatoes

Ingredients:

  • 2 pounds lean beef, such as round, cut in cubes, about 1 1/2-inch
  • 1 acorn squash, peeled, seeded and cut in 1-inch pieces
  • 3 to 4 medium red potatoes, cubed in 1 1/2-inch pieces
  • 1 large onion, quartered and sliced 1/4-inch thick
  • 1 package dry mushroom gravy mix
  • 1 can (14 1/2 oz) diced tomatoes with juice
  • 1/4 teaspoon allspice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • salt to taste
