Use red and green peppers for more color in this pepper steak recipe.


  • 2 pounds beef round steak, 1 inch thick, cut into 3-inch strips
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1 large onion, chopped
  • 1 garlic clove, crushed and minced
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground ginger
  • 1 can (14.5 to 16 ounces) tomatoes, cut up, undrained
  • 2 large green bell peppers, cut into strips, or 1 red and 1 green
  • 1/2 cup cold water
  • 1 tablespoon cornstarch
  • hot cooked rice


Place beef strips in crockpot. Combine oil, soy sauce, onion, garlic, sugar, salt and pepper, and ginger; pour over beef. Cover and cook on LOW for 5 to 6 hours, or until meat is tender. Add tomatoes and green peppers; cover and cook on LOW for 1 hour longer. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened. Serve over noodles or rice.
Serves 8.

This one's a keeper!, Member ajillity

I've made this again and again! It is unexpectedly flavorful and super easy to prepare. In following the directions I like adding the veggies later in the day so they retain their flavor and texture - it's an additional step, but well worth it! My kids love it, too!!!
