I made this, with a few adjustments - delicious! I had less than a pound of meat so I cut the other ingredients down a bit but I added more liquid because it was like glazing and burning to the bottom a couple of hours in. I used 2 fresh tomatoes (red & orange) with some water instead of canned. I used a yellow pepper, not a green one. I don't like ginger so I used a dash of cinnamon and a dash of yellow curry powder, which was a bit different but still good. I also don't like soy sauce so I microwaved a beef bouillon cube with 1/4 cup water and used that instead. I only had dehydrated onion but that works fine. I used more pepper and garlic in mine. BUT the point is you can make a few adjustments, just watch the liquid levels, and it'll turn out awesome, I'm sure. I was able to use up my fresh veggies and round steak. I think it would be just as good with chicken. You could also probably cut down the cooking time if you turn it up to High earlier. Overall very good, I will be making this again. Oh, serving over rice (in my case, microwave Teriyaki rice) is a must - it adds body to the stew.
