Easy Kielbasa with Beans

A kielbasa recipe for the crockpot, this recipe includes ground beef and pork and beans and pinto beans and tomatoes.

Ingredients:

  • 1 pound lean ground beef
  • 1 large green bell pepper, diced, or use part red bell pepper
  • 1 cup chopped onion
  • 1 pound kielbasa or smoked sausage, thinly sliced
  • 1 (10 1/2 oz.) can tomato soup, undiluted
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 1 (10 oz.) can diced tomato & green chiles, undrained
  • 3 (16 oz.) cans pinto beans, undrained
  • 4 (15 oz.) cans pork & beans, undrained
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups (8 oz.) shredded Cheddar cheese or Monterey Jack

Preparation:

Cook ground beef, green pepper, and onion in a heavy skillet over medium-high heat, stirring and breaking up until meat is browned and no longer pink. Remove fromskillet; drain. Brown smoked sausage in the same skillet; drain. Place ground chuck mixture, sausage, next 7 ingredients in a 5-quart slow cooker. Cook, covered, on LOW for 7 to 9 hours. Stir cheese into hot bean mixture just before serving.
Serves 10 to 12.

"I cooked it in a 6qt saucepan in a 170 oven for 7 hrs. DO NOT ADD SALT; use low fat kielbasa, diced tomatoes with basil and oregano, 29 oz can pinto beans + 15 oz can with jalipeno peppers I was so hungry I ate it before realizing I hadn't added the cheese - it was still delicious. 5 stars if you could make it a little less salty."
