Slow Cooker Potato and Sausage Dinner

Crockpot Potato and Sausage Dinner

Conserve energy and keep the house cooler by using your slow cooker instead of the oven. Here's a flavorful one-pot meal the whole family will enjoy. Serve this potato and sausage dish with a tossed salad or sliced fresh tomatoes.

Ingredients:

  • 10 medium potatoes, about 3 pounds
  • 12 to 16 ounces smoked sausage, such as chicken apple sausage or other similar sausage, sliced
  • 1 large onion, halved and sliced, optional
  • 2 cans (about 10 1/2 ounces each) cream of potato soup
  • 3/4 cup evaporated milk
  • 1/4 teaspoon pepper
  • 2 cups shredded Cheddar cheese
  • Paprika

Preparation:

Toss potatoes, sausage, and onions together in a 5 to 7-quart slow cooker. In a large bowl, combine soups, milk, pepper, and cheese. Gently stir the soup mixture into the potatoes. Sprinkle with paprika. Cover and cook on LOW for 6 to 8 hours, until potatoes are tender, stirring once about halfway through the cooking time.
Serves 6.
