Cook Time: 4 hours
Ingredients:
- 2 tablespoons butter or margarine
- 1/4 cup each, chopped celery, chopped onion, chopped green pepper
- 2 medium potatoes, cut in small cubes
- 1 can or package tuna in water (7 ounces), undrained
- 3 slices cooked bacon, crumbled (optional)
- 3 tablespoons flour
- 1 cup vegetable broth or chicken broth
- 1 can whole kernel corn, drained
- 1 cup evaporated milk or half and half
- salt and pepper to taste
- 1 cup shredded cheddar cheese
Preparation:
Melt butter or margarine in a non-stick skillet over medium low heat. Sauté celery, onion, green pepper and potatoes for about 10 minutes. Stir flour into the vegetable mixture and cook another 3 minutes; add tuna, bacon and vegetable broth. Stir until smooth and thickened. Add corn; transfer mixture to crock pot. Cover and cook on low for 4 hours; add evaporated milk, cheddar cheese, and salt and pepper to taste; turn to high and cook for another 20 to 30 minutes. Tuna chowder recipe serves 4.
