Ingredients:
- 4 cups vegetable or chicken broth
- 1 can (12 ounces) V-8 vegetable juice
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cups chopped cabbage
- 1 can (14.5 oz) tomatoes, diced, with juice
- 2 teaspoons dried chopped chives
- 1 teaspoon dried parsley flakes
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup lentils
Preparation:
In boiling water, cook cabbage briefly until just tender. Combine all ingredients in crockpot; cook on low for 6 to 8 hours.Lentil soup serves 4 to 6.
