Lentil Vegetable Soup Recipe

Use vegetable broth in this recipe if you want to keep it meat free. It's a flavorful soup, packed with vegetables, and delicious with biscuits or cornbread.

Ingredients:

  • 4 cups vegetable or chicken broth
  • 1 can (12 ounces) V-8 vegetable juice
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cups chopped cabbage
  • 1 can (14.5 oz) tomatoes, diced, with juice
  • 2 teaspoons dried chopped chives
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup lentils

Preparation:

In boiling water, cook cabbage briefly until just tender. Combine all ingredients in crockpot; cook on low for 6 to 8 hours.
Lentil soup serves 4 to 6.

Warm soup! Yum!, Member pregnancy

This was only the second thing I made in my crockpot and the first was a disaster, so I was scared, but this was delicious and simple. I made two changes: 1) I sauteed the onions and celery first because I can't eat even slightly undercooked onions and 2) I ran it through the blender for aesthetics. (I didn't want to spend dinner with the kids saying, ""Eww is that a..."") We simply served it with some whole wheat bread and teens to toddlers were pleased. My vegan husband was very thrilled that I pulled it off and even more so that it was yummy!
