Crockpot Bean Soup With Ham

Bean soup with ham, cooked in the slow cooker.

Cook Time: 10 hours

Total Time: 10 hours

Ingredients:

  • 1 meaty ham bone
  • 2 cups Navy beans or mixed beans, washed, sorted, and soaked overnight
  • 8 c. water (3 c. more may be added after bone is taken out, then cook some more)
  • 1 clove garlic, minced (or 1/2 tsp. garlic powder)
  • 1 bay leaf
  • 1 lg. onion, chopped
  • 1 tbsp. lemon juice
  • 1 tbsp. honey
  • Salt & pepper, to taste

Preparation:

Wash beans. Combine beans, ham bone, water, garlic, bay leaf, and onion in slow cooker. Cover and cook on HIGH for 1 hour. Turn to LOW and cook 8 to 10 hours longer, until beans are tender. Season with lemon juice, honey, salt, and pepper, to taste. Remove ham bone; chop meat and return to crockpot. Remove bay leaf before serving.
Serves 6 to 8.

First time I made this we followed recipe and there was way too much water so here is what I did the second time around. Rinsed/soaked navy beans. Next day I put them in Crockpot. I only used enough water to cover about 1 inch or so over beans. Sliced up smoked ham, chopped up carrots, crushed 2 clv of garlic, added about a Tbls spoon or two of veg juice, salt to taste and put on high. After 4 hours I sliced up potatoes into small chunks and let cook for another 4 hrs on high. I also add some mesa flour to help thicken. My daugher loved this the second time around and its even better second day. Great thing about this recipe is you adjust ingredients to your taste with no need to be exact.
