Beef Barley Soup Recipe
Serve this hearty beef and barley soup with crusty bread or rolls.

Cook Time: 7 hours

Total Time: 7 hours

Ingredients:

  • 1 pound lean stew beef, cut in 1/2-inch cubes
  • 1/2 cup chopped onion
  • 2 ribs celery, chopped
  • 2 medium carrots, diced
  • 3/4 cup barley
  • 1 bay leaf
  • 6 cups beef broth
  • 1 teaspoon salt, or to taste
  • pepper, to taste

Preparation:

In crockpot, combine stew beef with onion, celery, carrots, barley, bay leaf, and beef broth. Cook beef and barley soup on LOW in crockpot for 6 to 8 hours. Taste and add salt and pepper, to taste.

Timing is key when using a slow cooker. If the onions don't cook in the alloted time, the celery and carrots will be almost raw. The whole point of using a recipe like this is to find these things out at the beginning. The just throw it all in and hope for the best approach doesn't work here. Think I'll head over to Epicurious and ChowHound and consult the real foodies. And that's a yes, I'd make it again, but not with this recipe.
