Cook Time: 7 hours
Ingredients:
- 1 1/2 cups corn kernels, or 1 can, drained
- 1 1/2 cups diced zucchini
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 2 to 3 medium potatoes diced
- 1 1/2 pounds lean ground beef
- 2 teaspoons dried leaf oregano
- 1/2 teaspoon dried leaf basil
- dash garlic powder
- 2 bay leaves
- salt, to taste
- 1/3 cup freshly grated Parmesan cheese, optional
Preparation:
Brown ground beef; drain well. Combine ground beef with remaining ingredients, except salt and cheese, in crockpot. Cook on low 6 to 8 hours. Taste and add salt. Serve with crusty bread and top each serving with Parmesan cheese, if desired. Recipe can be doubled.
