Italian Vegetable Beef Soup

Italian vegetable soup with hamburger and zucchini and tomatoes and potatoes.

Cook Time: 7 hours

Ingredients:

  • 1 1/2 cups corn kernels, or 1 can, drained
  • 1 1/2 cups diced zucchini
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 2 to 3 medium potatoes diced
  • 1 1/2 pounds lean ground beef
  • 2 teaspoons dried leaf oregano
  • 1/2 teaspoon dried leaf basil
  • dash garlic powder
  • 2 bay leaves
  • salt, to taste
  • 1/3 cup freshly grated Parmesan cheese, optional

Preparation:

Brown ground beef; drain well. Combine ground beef with remaining ingredients, except salt and cheese, in crockpot. Cook on low 6 to 8 hours. Taste and add salt. Serve with crusty bread and top each serving with Parmesan cheese, if desired. Recipe can be doubled.
