Crockpot Lamb and Lentil Soup

Ingredients:

  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • 4 cups Swiss chard, spinach, or escarole, chopped
  • 2 cups lentils
  • 2 lamb shanks
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper
  • 7 cups beef broth
  • 1/4 cup fresh lemon juice

Preparation:

Saute onion and garlic in oil until tender. Combine in the slow cooker with greens lentils, lamb shanks, salt, pepper, and broth. Cover and cook on LOW for 8 to 10 hours. Add lemon juice, adjust seasonings, and serve. Shanks may be served on the side or meat may be removed from bones, diced and returned to soup.

"This soup lasted a few minutes and was gone. I used chicken stock and it came out terrific. I will make this again and again. P.S. You can add some garbanzos to the soup and it will be similar to an authentic Persian ash."
