Ingredients:
- 1 1/2 pounds lean lamb stew meat, diced
- 3 tablespoons butter
- 1/2 cup chopped onion
- 2 curry powder
- 2 tablespoons flour
- 1/4 cup lentils
- 2 Granny Smith apples, peeled & diced
- 1 green bell pepper, diced
- 2 medium carrots, diced
- 1 teaspoon sugar
- 1/2 teaspoon ground mace
- 1/4 teaspoon ground cloves
- salt and pepper, to taste
- 2 quarts water
- 1 cup coconut milk
- hot cooked rice, 3 to 4 cups
Preparation:
Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes. Combine meat and curry mixture in crockpot with remaining ingredients, except coconut milk and rice. Cover and cook on low 8 to 10 hours. Taste and adjust seasonings, adding more salt and pepper and more curry powder if needed. Add coconut milk and heat thoroughly. Serve with hot cooked rice.Serves 6 to 8.
