Crockpot Lamb Stew with Curry

Mulligatawny stew recipe with lamb and spices, along with apples and coconut milk.

Ingredients:

  • 1 1/2 pounds lean lamb stew meat, diced
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 2 curry powder
  • 2 tablespoons flour
  • 1/4 cup lentils
  • 2 Granny Smith apples, peeled & diced
  • 1 green bell pepper, diced
  • 2 medium carrots, diced
  • 1 teaspoon sugar
  • 1/2 teaspoon ground mace
  • 1/4 teaspoon ground cloves
  • salt and pepper, to taste
  • 2 quarts water
  • 1 cup coconut milk
  • hot cooked rice, 3 to 4 cups

Preparation:

Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes. Combine meat and curry mixture in crockpot with remaining ingredients, except coconut milk and rice. Cover and cook on low 8 to 10 hours. Taste and adjust seasonings, adding more salt and pepper and more curry powder if needed. Add coconut milk and heat thoroughly. Serve with hot cooked rice.
Serves 6 to 8.

not worth the time, Member vivcookie

I stuck to the recipe and after waiting all day for what seemed like an exotic combination of ingredients, it was very bland. I tried adding another teaspon of sugar, two more teaspoons salt, all of which did nothing to this huge pot of blah. This makes it special, as the name implies, put a jar or two of mango chutney in the pot. Yum! The reason I say this is because I wanted to slog my way through this whole bunch of soup, so I put 2 heaping teaspoons of chutney in one serving bowl of soup (1/2 soup + 1/2 brown rice). It is very flavorful now but if I put chutney in just about any store bought soup it is going to taste great, too!
