Margaret's Taco Soup

Margaret's fabulous taco soup is loaded with flavor and great ingredients. Serve this ground beef and beans taco soup with crusty bread or rolls and a simple tossed salad for a delicious family meal. It's a great soup for lunch, too!

Ingredients:

  • 1 pound lean ground beef
  • 1 large can crushed tomatoes
  • 1 can (12 to 15 ounces) whole kernel corn
  • 1 can black beans
  • 1 can red kidney beans
  • 1 can pinto beans
  • 1 envelope Hidden Valley Ranch Dressing mix
  • 1 envelope Taco Seasoning
  • 1/4 cup chopped onion

Preparation:

In a heavy skillet, brown the ground beef, cooking and breaking up until no longer pink. Combine all ingedients in crockpot with juice from beans and corn; cook on low 4 to 6 hours. Serve with tortilla chips, sour cream and shredded cheese. Use the chips instead of crackers.

I loved this soup. It was very flavorful. I didn't have to add any extra seasoning to it. I did change the recipe, however: 1 pound lean ground beef 1 large can crushed tomatoes 1 can (12 to 15 ounces) whole kernel corn 1 can navy beans 1 can pinto beans 1 envelope ranch dressing mix 1 envelope taco seasoning I'm really int health foods, so I bought the lightest, lowest-calorie versions of the ingredients I could and I left off the sour cream and cheese, and used Doritos Baked chips instead. It made six servings at 1.5 cups a serving (believe me, it's a lot. It filled up the entire bowl). Best of all, without the chips, there were only 288 calories per serving and only about 24 calories from fat per serving. That's an incredibly good return. The meal will keep you full and satisfied and has fewer calories and fat calories than most packaged ""lean"" meals! Great for watching weight and staying full for long periods of time. If you're vegetarian and you cut out the lean ground beef, there will be no fat calories.
