Beef Broccoli Soup

Ingredients:

  • 1 1/2 lb. lean ground beef
  • 3 cup broccoli, chopped
  • 2 cans (4 oz.) mushroom pieces or 1 cup fresh chopped mushrooms
  • 1/2 cup celery, chopped
  • 1 cup carrots, sliced
  • 1/4 cup green pepper, chopped
  • 4 cups V-8 juice or tomato juice
  • 1/2 cup water
  • 1/4 to 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. thyme
  • 1/4 tsp. oregano

Preparation:

Brown beef; drain off fat. Add vegetables, tomato juice, water, and seasonings. Place in slow cooker; cover and cook on LOW for 8 to 9 hours. Serves 6
