Crockpot Bean Soup With Basil

Ingredients:

  • 1/2 pound Great Northern beans
  • 1 pound lean stew beef, cut in 1" cubes
  • 2 small zucchini, diced
  • 2 medium turnips, peeled and diced
  • 1 large potato, peeled and diced
  • 2 stalks celery, sliced
  • 2 medium onions, chopped
  • 1 can whole tomato (28 oz)
  • 2 teaspoons leaf basil
  • 1/8 teaspoon crushed red pepper
  • 1 tablespoon salt
  • 2 tablespoons olive oil

Preparation:

Following package directions, cook beans until tender; drain. Combine all ingredients in Crock Pot; add water to cover and mix well. Cover and cook on high setting for 2 hours, Then turn to low setting for 5 to 7 hours (or cook entire time on high setting for 5 to 6 hours).
