Crockpot Jerk Chicken Recipe

  • 1 large onion, cut into 8 pieces
  • 1 teaspoon ground ginger or 1 tablespoon minced crystallized ginger
  • 1/2 to 1 habanero pepper, seeded, deveined, and finely minced (wear gloves)
  • 1/2 teaspoon ground allspice
  • 2 tablespoons dry mustard
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons red wine or balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, crushed and minced
  • 3 to 4 pounds chicken tenders

I tried to follow the recipe exactly, but had to make the following adjustments: chicken, I used 5 thighs (skin off), mustard, iused regular yellow, instead of habanero pepper, used one packet of crushed red (Think pizza packet). cook time was 3.5 hours, took chicken out, shredded it, put it back in the sauce. anyways, it WAS A HIT!!!!!!! SOOOOOO good!!!! I was told by ALL of my guests that I was to make it again, and there were NO leftover! I was even asked for the recipe so they could make it at home. This was a winner!!! served with red beans and rice with a side of sweet potatoes. thank you!!!
