Crockpot Carrot Pudding

A spiced carrot pudding recipe, made in the crockpot.

Ingredients:

  • 4 large carrots, cooked and grated
  • 1 small onion, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 tablespoon granulated sugar
  • 1 cup milk
  • 3 eggs, beaten

Preparation:

Mix together the cooked carrots, onion, salt, nutmeg, sugar, milk, and beaten eggs. Pour into greased slow cooker; cover and cook on HIGH for 3 to 4 hours.

"This recipe was a fun experiment in my slow cooker and came out almost cake-like . Unfortunately it tasted horrible. I don't recommend this particular recipe but haven't given up on finding another for carrot pudding."
