Slow Cooker Farro Pilaf

Slow Cooker Farro Pilaf

This simple grain dish cooks to perfection in the slow cooker. To make this a heartier main dish, add a little more ham and serve with a tossed salad or top with a poached egg.


  • 1 cup farro
  • 2 to 4 slices of diced bacon or about 1/2 cup of diced ham
  • 2 1/2 cups chicken broth
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup chopped onion
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried leaf thyme
  • 1 cup thawed frozen peas
  • salt, to taste


In a slow cooker, combine the farro, ham or bacon, chicken broth, bay leaf, parsley, onion, pepper, and thyme. Cover and cook on HIGH for 2 1/2 to 3 hours, until farro is tender and most of the liquid has been absorbed. Add thawed peas and continue cooking for 15 minutes longer.

Taste and add salt, as needed.

Serves 4 to 6.
