User Rating 1 Star Rating (1 Review)

Sour cream spice cupcakes with raisins and chopped nuts.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoons ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped nuts or raisins
  • 2 eggs
  • 1 cup sugar
  • 1 cup sour cream, full fat
  • 1/2 teaspoon soda

Sift together the flour, baking powder, salt, and spices. Sift again. Lightly stir in the chopped nuts or raisins, tossing to coat. In a mixing bowl, beat eggs until light; add sugar and beat until well blended. Combine sour cream and baking soda; stir into the spice mixture. Stir in dry ingredients, mixing until smooth and well blended. Bake in muffin paper-lined or greased and floured cupcake pans at 375° for about 20 to 25 minutes, or until cake bounces back when lightly touched with ginger. Makes about 15 to 18 cupcakes.

Don't make these!, Member herbertsutcliffe

I am a good baker and followed the directions carefully. These""cupcakes"" turned out to be like very dry muffins with little spice flavor. I had to throw them out - my family would not eat them. Some adjustments need to be made to the recipe - some sort of fat? More liquid? More spice? I was very disappointed.
