Date Filled Cookies

Date cookies with oatmeal and brown sugar, shared on our forum.

Ingredients:

  • 1 c. brown sugar
  • 1 c. butter
  • 3 eggs
  • 2 c. oatmeal
  • 2 1/2 c. flour
  • 3/4 c. sour milk
  • 1 tsp. soda in flour
  • .
  • Filling:
  • 1 pkg. dates, finely chopped
  • 1 c. brown sugar
  • 1 c. water

Preparation:

Cook filling until thickened. Cream butter and sugar. Add eggs and mix well. Add flour and soda alternately with sour milk, then add oatmeal. Roll out on floured board, cut with cookie cutter. Put one teaspoon of dough filling on cookie and cover with another cookie. Bake at about 375 degrees for 10 to 15 minutes.

"Something is wrong with this recipe! Way too gooey to roll out and after baking too cakey--not cookie like....after baking one batch, I added some choc. chips, trashed the dates and tried to salvage the ingredients that I had invested. In the oven now....."
