Date Nut Fingers

Date nut cookies are easy to make and bake, with chopped nuts and dates.

Cook Time: 30 minutes

Ingredients:

  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sifted all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped pecans or walnuts
  • 8 ounces chopped dates
  • powdered sugar, optional

Preparation:

Beat eggs until foamy. Beat in sugar and vanilla. Sift dry ingredients and stir into other ingredients. Stir in chopped nuts and dates. Spread in greased and floured 8-inch square pan. Bake at 325° 25 to 35 minutes or until top has crusted somewhat. Cut into finger-size pieces while warm; cool, then remove from pan. These can be rolled in powdered sugar for a more festive look.
