Date-Oat Quick Bread

A date bread recipe with oats and dates, along with brown sugar, butter, and other ingredients. Scroll down to see more recipes using dates.

Ingredients:

  • 2 1/2 cups sifted all-purpose flour*
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup quick rolled oats
  • 1 package (8 ounces) dates, chopped
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 1/4 cups milk
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla

Preparation:

Sift flour, baking powder and salt into a large bowl; add sugar. Stir in oats and dates. In a separate small bowl, beat egg with milk; stir in melted butter and vanilla. Add to flour mixture and stir until evenly moist. Pour mixture into a greased 9 X 5 X 3-inch loaf pan. Bake at 350° for 55 to 65 minutes, or until a toothpick comes out clean when inserted in center. Once the loaf has cooled, wrap and store overnight for best flavor.
*May omit baking powder and salt if using self-rising flour.

"I tried this date loaf recipe this morning and highly recommend it. It was quick and easy to make and tastes great. Like the other reviewer, I would use a bit less sugar the next time I make it. I find the dates already add a lot of sweetness. Anywhere between half and 2/3s the amounts would probably be good. I also added several Tbsps. of flaxseeds and sunflowerseeds to give it a bit of added crunch and graininess. This seemed to have worked very well, and the recipe is basic enough that I'm sure one could ""tamper"" with it in various ways. Next time I might grate in some carrot or apple as well. Yummy stuff! And it should go well in lunchboxes, for snacks, or even breakfast."
