Egg Croquettes


Egg Croquettes are made with hard cooked eggs, parsley, butter, onion, cheese, and cracker crumbs, along with other ingredients.


  • 6 hard cooked eggs, chopped
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons butter
  • 1/2 cup finely chopped onion
  • 2 tablespoons flour
  • 1/2 cup milk
  • 1/3 cup shredded mild Cheddar or American cheese
  • salt and pepper
  • 1/4 teaspoon dry mustard
  • 1 1/2 cups coarse cracker crumbs
  • 2 eggs, slightly beaten


Combine eggs and parsley. Heat butter in a saucepan; sauté onion until tender. Stir in flour; gradually stir in milk and cook, stirring constantly, until thickened. Add cheese, salt, pepper, and mustard. Fold in the eggs and parsley. Chill mixture for about 2 to 3 hours. Form chilled mixture into 12 cylinder croquettes. Roll in cracker crumbs, then in beaten egg, then in cracker crumbs again. Fry in hot oil at 375° for about 2 minutes, or until nicely browned.
Makes 6 servings.
