  • 1 1/3 cup all-purpose flour, about 6 ounces
  • 1 teaspoon salt
  • 2 large sweet onions, sliced
  • 1/4 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 2 large egg yolks
  • 3/4 cup beer

Mix together the flour, salt, pepper, oil and egg yolks. Gradually whisk in the beer. Refrigerate the batter for 3 to 4 hours before using.

Slice onions into rings; separate rings and dip in the batter. Add a little more beer, if needed.

Deep-fry in batches in 370° oil until golden brown.

I must agree with the other reviews about how wonderful this beer batter was. It was fantastic on onion rings as well as with all other vegetables that I tried it with. The only problem I had was that I needed to add more liquid (beer) to the mix due to it being to dry. But after that it was ready to go and my family loved every bite.
