Fried Spinach Balls

Fried spinach balls can make a tasty alternative to meatballs in spaghetti sauce.

Ingredients:

  • 2 cups chopped cooked spinach
  • 2 tablespoons butter
  • 2 tablespoons grated onions
  • 2 tablespoons grated cheese
  • salt and pepper
  • 2 eggs, divided
  • 1 cup bread crumbs
  • 1/8 teaspoon allspice
  • 1/4 cup water
  • fine dry bread crumbs

Preparation:

Combine chopped spinach, melted butter, salt, pepper, 1 well-beaten egg, bread crumbs, onion, cheese and allspice; mix well. Allow to stand 10 minutes, then shape into 1-inch balls.

Combine remaininig egg with the 1/4 cup water; beat until well blended. Roll the spinach balls in bread crumbs, dip in egg mixture, then again in bread crumbs. Fry in hot deep fat, about 360°, until golden brown. Drain on paper towels; serve hot.
Serves 6.
