Ingredients:
- 2 cups chopped cooked spinach
- 2 tablespoons butter
- 2 tablespoons grated onions
- 2 tablespoons grated cheese
- salt and pepper
- 2 eggs, divided
- 1 cup bread crumbs
- 1/8 teaspoon allspice
- 1/4 cup water
- fine dry bread crumbs
Preparation:
Combine chopped spinach, melted butter, salt, pepper, 1 well-beaten egg, bread crumbs, onion, cheese and allspice; mix well. Allow to stand 10 minutes, then shape into 1-inch balls. Combine remaininig egg with the 1/4 cup
water; beat until well blended. Roll the spinach balls in bread crumbs,
dip in egg mixture, then again in bread crumbs. Fry
in hot deep fat, about 360°, until golden brown. Drain on paper towels; serve hot.
