Ingredients:
- 2 tablespoons butter, softened
- 2 cups sugar
- 4 tablespoons flour
- 1/8 teaspoon salt
- 5 tablespoons lemon juice
- peel of 1 lemon, finely grated
- 3 eggs, separated
- 1 1/2 cups milk
Preparation:
Preheat oven to 325°. Cream butter; add sugar, flour, salt, lemon
juice and lemon peel. Beat egg yolks; stir in milk then beat into lemon mixture.
Fold into stiffly beaten egg whites. Turn into a 2-quart baking dish set
in a pan of water; bake 45 minutes or until inserted knife comes out
clean. Refrigerate before serving.
