Enjoy this recipe for lemon squares, a popular bar cookie  made with a buttery shortbread cookie crust and luscious lemon topping.

Ingredients:

  • Crust
  • 2 cups flour, 9 ounces
  • 1/2 cup confectioners' sugar, plus more for topping
  • 2 sticks butter
  • Filling
  • 2 cups sugar
  • 1 tablespoon flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs, well beaten
  • 1 heaping tablespoon grated lemon zest
  • 1/4 cup lemon juice
  • confectioners' sugar, for sprinkling

Preparation:

Heat the oven to 300° F.

For the crust, sift 2 cups of flour and powdered sugar together. Cut in 2 sticks of  butter until well blended. Press mixture over bottom of a 9 by 13 by 2-inch pan. Bake about 25 minutes at 300° until lightly browned. 

Remove the crust from the oven and increase the oven temperature to 350° F.

For the filling, combine 2 cups granulated sugar with the 1 tablespoon of flour, baking powder, salt, eggs, lemon zest, and juice.Blend well.  Spread over the top of the baked crust. Bake at 350° for 25 to 30 minutes, or until set.

Cool in pan on rack. Sift confectioners' sugar over the bars while still warm.


Makes about 12 servings.

the set up of the recipe, Member tamdesjar

I am annoyed at how they designed the recipe they never separated the crust from the rest of the recipe its ridiculous write the recipe properly it is a bad design.
