Caramel Sauce Recipe

A caramel sauce recipe for ice cream or other desserts.

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup boiling water

Preparation:

In a small heavy skillet, melt sugar, stirring constantly with a wooden spoon. When sugar is golden brown, very slowly and carefully stir in the boiling water. Cook for about 3 minutes to soft ball stage*, to about 238° on a candy thermometer. Serve warm with ice cream.

*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten when picked up with fingers (234° to 240°).

Not really ""ice cream sauce"" and not for beginnersMay 09, 2008By SheSpeaks0
"I tried this recipe because I wanted to make caramel sauce and didn't have any cream on hand, as most recipes call for. The biggest warning I would give about this recipe is that it's definitely not for beginners. The instructions are very vague (not including how high a heat you should cook the sugar over), so if you're not experienced with candy, it's easy to burn or overcook the sugar (as I think the other reviewer might have.) Mine came out smooth, but definitely is not a substitute for ice cream topping as far as I'm concerned. You really need the element of cream to make caramel flavor come alive. In the end, I wouldn't recommend this recipe. I'll be headed out to the store this afternoon for heavy cream."
