Frankenstein Creole Bean Dip with Baby Carrot Toes

This is a great-tasting dip served with chips, baby carrots ("carrot toes"), or other raw veggies for dipping. The black and orange colors of the dip and carrots are perfect for Halloween.

The dip may be served hot, warm, or at room temperature. If desired, also serve cheese curls (Cheeto-type snacks) as "crooked witch fingers."

Using all black beans makes the dip a very dark color--an ideal near-black contrast for any orange colors in the accompaniments or serving dish. However, any type of beans are fine--even a combination of two different types.

Yield: 12

Ingredients:

  • 2 15-ounce cans black beans, well drained*
  • 6 ounces cheddar cheese, grated (1 1/2 cups grated cheese)
  • 3/4 cup finely chopped green onions (4 green onions)
  • 1/3 cup diced canned green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 cup sour cream
  • baby carrots (1-2 pounds, depending on other accompaniments for
  • dipping, such as chips or other raw vegetables)

Preparation:

*You may also use kidney or pinto beans, or other beans of your choice; one 15-ounce can of beans, drained, equals 1 1/2 cups of beans.

Combine all ingredients, except carrots or other "dippers." Heat over low heat in a heavy, thick-bottom pan, stirring often, until cheese melts and ingredients are combined. May be served hot or at room temperature.

May be made several days ahead, and even frozen if desired (texture will suffer a bit from freezing and defrosting, but not much).
