Ingredients:

  • 1 eggplant
  • 1 can (10 1/2 ounce) condensed cream of mushroom soup, undiluted
  • 1 small onion, diced
  • 1/4 cup diced green or red bell pepper pepper
  • 1/2 cup thinly sliced celery
  • 1 cup shredded Cheddar cheese
  • salt and pepper to taste
  • 1 teaspoon Worcestershire sauce
  • 1 medium tomato, diced

"I made this and it was sooo good! I love the chili-cheese sauce it tasts so good... I love cheese and spices. You could even probably substitue many vegetables for the eggplant like zuccini or squash. Tastes like the cheese sauce from some Tex-mex restaurants here... but I won't name names! -Houston,TX"
