Deep Fried Eggplant

Easy deep fried eggplant.

Ingredients:

  • 1 large eggplant
  • salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1 egg
  • 2 tablespoons water
  • 1/4 cup fine dry bread crumbs
  • oil for deep frying

Preparation:

Peel eggplant; cut into 1/4-inch thick sticks. Sprinkle with salt and pepper, roll in flour then dip into egg beaten with water. Roll in crumbs then fry in hot oil at about 375° until golden brown. Transfer to paper towels to drain and serve immediately with a dip, if desired.
