Farmers Breakfast Skillet with Bacon and Eggs

A farmer's breakfast all in one skillet.

Cook Time: 15 minutes

Ingredients:

  • 5 strips bacon, chopped
  • 2 tablespoons finely chopped onion
  • 3 medium cooked potatoes, cubed
  • 6 eggs, beaten
  • salt and pepper to taste
  • 1/2 cup shredded mild Cheddar cheese

Preparation:

In a heavy skillet, cook bacon until crisp; remove to paper towels to drain. In drippings, cook onion and potatoes until browned, about 5 minutes. Pour beaten eggs into the skillet. Cook, stirring gently, until eggs are set and cooked. Season with salt and pepper; sprinkle with the bacon and shredded cheese. Let stand a minute or two, just until cheese melts. Serves 4.

"I tried this recipe and it worked well for my husband and the children. Although i was wondering if i can use ham instead of the bacon. Also, i was wondering if I can prepare it with some toast and ketchup because this to my husband does not fill him up. lol. Anyways, overall this was a fantastic dish, and i will be making more of it when we get guest from NewYork come over for the weekend. Thank you and Happy Eatings!"
