Egg salad is super easy to prepare and makes great sandwiches. Add lettuce leaves to the bread or rolls. Use small rolls or buns for great party sandwiches.

Ingredients:
- 3 large hard-cooked eggs, peeled
- 1/4 cup finely chopped celery
- 2 to 3 teaspoons finely chopped red or yellow onion
- 2 to 3 tablespoons mayonnaise
- dash freshly ground pepper
- 1/4 teaspoon salt, or to taste, or use seasoned salt blend or Creole seasoning
- lettuce leaves
- 6 to 8 slices of bread, toasted, if desired
Preparation:
Put eggs in a medium bowl and chop well with a fork. Blend with the celery, chopped green onion, and mayonnaise, to taste. Stir in salt and pepper to taste. Spread the egg salad on lettuce-lined bread or toast slices.
Enough egg salad for 3 to 4 sandwiches.
