Baked Flounder with Bacon

Baked flounder recipe

Cook Time: 30 minutes

Ingredients:

  • 2 pounds flounder fillets
  • 4 slices bacon
  • 4 thin slices lemon
  • 1/2 cup condensed tomato soup
  • 1/2 cup water
  • 2 small bay leaves
  • salt and pepper to taste
  • 1 cup sliced onion
  • paprika
  • parsley sprigs, optional

Preparation:

Directions for baked flounder with bacon.
Place fish on top of 2 slices bacon in greased baking dish. Cover with remaining bacon and lemon slices.

Combine tomato soup and water. Add bay leaves, salt and pepper and sliced onion. Pour over fish. Bake in moderate oven 350° for 25 to 30 minutes. Place flounder on serving platter. Strain sauce and pour around and between fish. Sprinkle flounder lightly with paprika and garnish with fresh parsley sprigs.

Baked flounder recipe serves 4.

"Not good. WEird flavor combo. I think its the tomato soup. Should have known NEVER to use it. It makes the fish taste pre-fab."
