Fried Chicken with Cumberland Sauce

An oven fried chicken recipe with currant jelly and orange sauce with ginger.

Ingredients:

  • 3 1/2 pounds chicken pieces
  • 1/2 teaspoon salt
  • dash pepper
  • 1/2 teaspoon paprika
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter
  • .
  • Cumberland Sauce:
  • 3/4 cup currant jelly
  • 1/4 cup orange juice
  • 1 teaspoon dry mustard
  • 1/4 teaspoon ground ginger

Preparation:

Preheat oven to 375°. Grease a shallow 2-quart baking dish. Wash chicken and pat dry.

In a food storage bag, combine salt, pepper, paprika, and flour. Shake chicken in bag, a few pieces at a time, until well-coated. Arrange chicken in the baking dish; drizzle with the melted butter.

Cover dish with foil; bake for 30 minutes. Meanwhile, combine sauce ingredients in a small saucepan; bring to a boil. Remove from heat; stir until smooth. After first 30 minutes of baking time, remove cover from chicken. Pour sauce over chicken and bake 30 minutes longer, basting occasionally.
Serves 4.
