Spicy Cajun Chicken Strips

Scroll down to see more fried chicken recipes, including oven fried chicken. from Barbara Whiting, Stay-at-Home Parents Guide

  • 3 lbs. boneless/skinless chicken breast or thighs
  • Cayenne Pepper Sauce (any brand will work, we used "Trappey's Red Devil Cayenne Pepper sauce")
  • Cajun Deep Fry Coating Mix (we got the kind in a box, but you could use your own blend, if you have one.)

Slice the chicken into finger-sized pieces. Pour some cayenne sauce to lightly cover the chicken, mix so it's all coated. Refrigerate, turning now and then, for an hour or two.

Then coat slices in the Cajun coating mix, and deep fry until lightly brown.

Somehow, I think marinating it in the sauce first keeps it moister, and gives it a little extra bite. You can eat plain or dip in ranch or blue cheese dressing.
