Ham and Corn Fritters

Fritters with cream style corn and diced ham.

Ingredients:

  • 1 cup cream-style corn
  • 2 eggs
  • 3/4 cup milk
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup diced ham
  • oil for deep frying

Preparation:

Mix together corn, eggs, milk, flour, baking powder, salt, and diced ham. Heat oil in deep-fryer or deep kettle to about 365°. Drop batter by heaping tablespoons into deep hot fat; fry until golden brown. Serve hot, with applesauce or sweet and sour sauce, if desired.

"I made this recpie for my family of 6 for lunch and we came out with about 2 each and 1 spare. They were quite big ones too. I changed the mixture a bit putting in 3 eggs, extra milk, extra flour, extra corn etc and I also added about 1/2 a cup of finely grated cheese. They cooked well and rose really high. A great, quick lunch idea!"
