Chocolate fudge recipe, made with butter, chocolate, sugar, and vanilla, along with walnuts or pecans.


  • 2 squares unsweetened (2 ounces) chocolate
  • 3/4 cup evaporated milk (not sweetened condensed)
  • dash salt
  • 2 cups sugar
  • 4 tablespoons butter
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans


Melt chocolate over very low heat. Add the evaporated milk and salt; stir well. Stir in sugar and bring to a full boil over medium heat. Continue to cook, stirring occasionally, until mixture forms a soft ball when dropped in cold water, about 235° F on a candy thermometer. Add butter and vanilla and let stand until lukewarm. Beat well with a sturdy wooden spoon until mixture begins to thicken and lose its gloss, then stir in pecans. Spread in the prepared pie plate. Refrigerate; cut into squares when the  fudge is firm.
Makes about 1 pound.
