Peanut Butter Fudge

Ingredients:

  • 2 cups brown sugar
  • 1 cup evaporated milk
  • 1/4 to 1/2 cup peanut butter
  • 1 teaspoon butter
  • vanilla
  • 1/2 cup chopped walnuts or pecans, optional

Preparation:

Combine sugar and milk in a medium saucepan. Bring to a boil and continue to boil gently until a little dab added to cold water forms a soft ball*, or about 238° on a candy thermometer. Add peanut butter, butter, and vanilla; beat until the mixture begins to thicken and is not as glossy. Add nuts, if using. Spread in a buttered loaf pan; chill until fully set and cut into squares.

*To Test for Soft Ball Stage:
A small amount of syrup dropped into cold water forms a ball, but is soft enough to flatten when picked up with fingers (234° to 240°).

"This recipe says to put ALL ingredients into a saucepan and brought to a boil , but then later states that the peanut butter, butter, and vanilla are to be added later. Which one is it? I tried it by boiling only the brown sugar and milk and could never get it to form a soft ball. Then I tried it putting ALL the ingredients in the pan and boiling to 238 degrees. That worked out a little better, but the fudge never did set up properly."
