Velveeta Fudge

Easy fudge made with cheese.

Ingredients:

  • 1 cup (2 sticks) butter, softened
  • 8 ounces pasteurized process cheese, Velveeta, cubed
  • 1 1/2 pounds confectioners' sugar, about 5 cups unsifted
  • 1/2 cup unsweetened cocoa
  • 1/2 cup non-fat dry milk
  • 2 teaspoons vanilla extract
  • 2 cups coarsely chopped pecans or walnuts

Preparation:

In a large saucepan over medium heat butter and cheese cubes together, stirring frequently; remove from heat. Sift together confectioners' sugar and cocoa; add to cheese, mixing well. Stir in non-fat dry milk, vanilla and nuts. Turn into a 9x9x2-inch pan; chill until firm and cut into squares. Makes about 3 pounds of Velveeta Fudge.

"First tried this from someone else's care package when I was serving in the Middle East last year. Such a novelty to get chocolate in the summer that tasted good (IOW, not melted in transit and re-hardened like a candy bar...yuck). I thought the recipient was joking when he said it was from Velveeta, and that it had made it all the way through the mail, still tasting good (I thought maybe a local had made it for him)...I was so sure he was joking that I didn't even bother to double-check...but the yummy taste and funny name stuck in mind until several months later when I was back home and trying to come up with ideas for care packages to send. I searched the name and Lo and Behold...he was NOT kidding! I made it from this recipe, and sure enough--it's what he had. Consider this fudge when making food gifts, but be sure to double the batch since I can almost guarantee you much of it will never make it out of your house...or maybe that's just my house...hehe"
